Happy Saturday! I don’t know what in the world is wrong with me! I cannot concentrate on anything lately. (Hence why this is appearing on Saturday!) I will sit down at my computer to work and go down one hundred rabbit holes and waste so many hours. I know COVID dreams are a real thing, but do you think that COVID ADD is? If it is such a thing, I have it!
Yesterday was my husband’s birthday, so I kind of took the day off ( I don’t know why). We had the family over for dinner to celebrate. I made him his favorite dessert, cheesecake. I have to say; it is the best thing I can make. It really is better than any cheesecake I’ve ever had, and it is always our favorite birthday cake to have around here. I am including the recipe below. You will either thank me or hate me!
Seafoam Green Top by SEA
I wanted to talk about a brand that I have loved for quite a while now for their feminine and effortless pieces. The brand is SEA, and I am obsessed with them. I ordered this cotton top with ruffle pleats at the collar and shoulder because of the aforementioned feminine and effortless look, and I loved the seafoam green color. Unfortunately, there are only a few sizes still available, but I have linked other similar styles below. How gorgeous is this top? SEA makes that most beautiful dresses too. I love this one and may order this one for fall (Hey, I’m thinking positive!). I wore this dress (also SEA) to my son’s rehearsal dinner in San Miguel de Allende because it had that feel to me, and this one to a friend’s son’s wedding last year. Obviously, I love this brand.

We are hanging out and doing much of nothing for the rest of the weekend! We stayed up until 1:30 last night and had a little too much vino. A nap or two may be in the cards. I hope you have a great weekend and stay well! xx

BEST CHEESECAKE, NO LIE!
CRUST:
Mix 2 cups crushed graham crackers
1/2 cup sugar
1/2 cup melted butter
Pack bottom and sides of a springform pan. Refrigerate.
FILLING:
Cream 3 large packages cream cheese (I use a handheld mixer)
Add 5 eggs, one at a time, beating thoroughly after each addition.
Add 1 cup sugar and 1 teaspoon vanilla
Pour into the shell and place it on a cookie sheet.
Bake 55 minutes at 300º
MERINGUE:
Mix 1 teaspoon vanilla
1/2 cup sugar
2 cup sour cream
Spread over baked mixture and cook 7 minutes longer. Cook on rack. Refrigerate at least 6 hours or overnight.

I believe you are onto something with a self diagnosis of Covid ADD. Arrrgh. I have such a hard time concentrating and getting things done. ????
